Daring Baker: Croquembouche

I am a Daring Baker! This is my first challenge.

The May 2010 Daring Bakers’ challenge was hosted by Cat of Little Miss Cupcake. Cat challenged everyone to make a piece montée, or croquembouche, based on recipes from Peter Kump’s Baking School in Manhattan and Nick Malgieri.

Part 1: Crème Patissiere
I made chocolate! Making the creme filling was a lot like making hollandaise sauce and thankfully I had just the technique! I love these little squeeze bottles.

Part 2: Pate a Choux (Puff Pastry)
Easy cheesy. Wait, did I overcook it? Food processor, you hide all of my mistakes! I love you.

Part 3: Carmel Glaze (aka GLUE)
I never made carmel glaze before. It's hot. I got it all over my hand and then I licked it off. I have blisters!!! But it was good. I named the final result Stumpy. He's not as pretty as most, but he's mine.

Vacation: Day 15/16 & Beyond

Jib has been home for 10 days! Yay!

His folks we here for a week visiting. Lucy got baptized on Sunday in her beautiful dress, handmade by grandma.

Here's a couple trip pictures. It sounded like the best vacation ever.

I think this is a river leaving Lake Baikal in Russia, but I might be wrong. I stole these pictures without permission.

Beijing... kind of hard to see

Since Monday things are getting a little normal. That day Guy punched his sister. He offered her a sad, little, wimpy, red balloon as an apology gift. Plus yesterday he counted to seven. Lucy is teething and mad. Hubby has been doing yard work, I've been doing kitchen work.

Vacation: Day 14

Had a great day, but I'm up too late.

We went into town and got my dad and went walking around Scheels. Guy thinks it's the coolest store in the world. He totally begged to go on the Ferris Wheel. Neither me or my dad felt like getting our eyes clawed out after Guy realized how high up it was so we didn't take him on it. It might have been okay but we can do that in a year or two. Guy loved the little play area too. It's been the first time he was able to play on it. While we were in the gun section, Guy spontaneously walked up to a gun case and kicked it as hard as he could. If he was trying to get assistance, that method worked well. We went to Caroline Kitchen for lunch. Guy started crying for no reason so I had to take him outside and lecture him until he was so bored he agreed to behave. He had all of Lucy's Mac & Cheese. Lucy ate everything else.

After an afternoon break for naps we went back into town and hung out at my dad's hotel/casino. Guy begged to play a slot machine. He can wait 19 years or he can go to work with his dad on Monday. Guy's choice. We went to the bowling ally and Guy thought bowling balls were the coolest things ever. We had sandwiches for dinner and Guy must have an eating disorder because he cried again. He loved the arcade. He played DDR and SkeeBall. Good day. Good night.

Oh yeah.. pictures!

Me & Lucy passing time on the escalator. There is a diaper in her hood. You have to carry your own belongings in this family.

Guy & gramps. We kept making fun of Guy's sucker saying it aged him by negative 2 years. He refused to part with it so he couldn't even try to pass for 21 at the slot machines.

Lucy liked the cheese off of the Cheetos and had a pile of uncheesed Cheetos. Guy ate the soggy, plain Cheetos.

My dad and Lucy like bright lights!

Guy playing DDR. When my mom was here last week she taught him how to play. As soon as he saw this game he ran over to it and started doing little funky dances. We wished he got it on video!

Vacation: Day 13

It was super nice today! We played outside all day. My dad got in this afternoon so he could join in on the fun of chewing on pine cones and climbing trees.

Lucy said there was just too much dirt in this barrel. She started moving it around but decided it would go faster is someone would just eat the stuff.

Guy discovered the joy of running through sprinklers today! Except after one run he'd make me do one and if I didn't get close enough to the sprinkler he would call me on it and demand a do over.

After my dad got to our house Guy cleaned out grandpa's truck of all empty food containers. And any that weren't empty, he emptied them into his belly and then took care of the wrapper. He also picked a bunch of grass and put a little pile on the top of each tire. I love toddler randomness.

Vacation: Day 12

I only took these pictures today because I'm tired and lazy. We went to a friends house today. Guy had a really hard time today. I think he misses dad. When we came home I showed him pictures and he got happier. He went to bed at 8 and got up again at 9:30 (not sure if he even went to sleep) so I read to him until he looked like a little zombie. He's sleeping now. Poor kiddo. I was going to say at least his sister makes him happy but he got in trouble today for kicking her. Toddler angst.

Vacation: Day 11

I'm ready to be committed now.

Vacation: Day 10

Lucy says it's time to wake up, Guy! I'm glad someone is taking over.

Except Lucy, that really isn't anything to be proud of. Get those clothes folded! I folded these clothes twice. Once I had them all sitting on the couches folded and Guy ran through and in 30 seconds had them all in a pile again. Meanie!

We went to pick up my new sunglasses and while I was changing Lucy's diaper in the car Guy got a hold of the sunglasses. It looked like he was about ready to break them so I smacked his shoulder (yes, I tried verbal threats first) and he started weeping. He took the little microfiber cloth used for cleaning the glasses out and started dabbing his eyes with it. Oh my goodness. I don't know what to think of this little boy.

We spent the evening at McDonalds so I could read a book while the kids played. I'm bad like that.

Vacation: Day 9

Sick Day!

No one is feeling that great today. My mom & Orvel left this morning. Before they left Lucy had to show off by walking across the living room. Way to go, Lucy! I'm glad she did something memorable because we just sat around the house all day.

Lucy couldn't sleep last night so she ended up bunking with me. I was too tired to go comfort her ever 20 minutes. I put her in the middle of the bed but she kept squirming until I was kicked out of bed.

Guy got on my nerves for laying down on the back step, half outside the house, half inside the house. It was cold out and I had a fire going so that wasn't okay with me. He got sent to his room where he immediately fell asleep. I guess he didn't sleep well either at night.

Later in the afternoon he dressed himself and told the cat how nutritious her food was.

Good luck to the cat on finding her food...

Vacation: Day 8

We spent the morning with grandma Kathy at the River Festival. The kids loved the food. Everyone but Lucy got a new pair of sandals. I told Lucy she needs to learn to walk first.

Guy can't decided which flavor is the best. (Lime obviously). We got a hat and a sticker for buying our sandals and Guy claimed them. He wore that oversized hat all day.

Lucy says she'd had enough snow cone. Time to move again.

Lucy loves sweet tea we found out. She drank most of it while having a death grip on the cup.

After naps we went to Circus Circus for the evening without a camera. They both won some stuffed animals at a fishing game. The game that lets everyone win... don't tell them that though. Guy played some games where he had to throw balls or rings and he actually did really good. Didn't win anything but at least he wasn't throwing the stuff behind him. The kids had a good time, mama doesn't know if she'll go back until the kids are old enough to ask though.

Vacation: Day 7

Lucy enjoyed a waffley morning.

Picked my mom and Orvel up at the airport today. They had a lot of cool vacation stories about Vegas - my mom even took some delicious pictures for me. Like this one:

We spent the morning playing in the backyard with Lucy while Guy watched some Chipmunk cartoon in the house.

They took us out for lunch then we let the kids play at the park.

Me and the kids stayed up an hour past our bedtime. I don't know why, good songs kept coming on the radio. Guess I should go to bed. Can't believe I still have a week of this to go. I think I'm going nutty.

Vacation: Day 6

We stayed home this morning and ordered a pizza for lunch and had some friends over.

Lucy hangs out with her pal, Madeline. Lucy says she has a drool shortage and asks Madeline is she can borrow some.

Guy playing on his new rocking horse. This was my rocking horse when I was little.

Guy made some Kool-Aid to go with dinner. He has an interesting way of stirring.

Aside from having friends over we didn't do much today. A nice, easy day. Will have a busy day tomorrow, picking up my mom & Orvel at the airport.

Vacation: Day 5

We had a great morning. I even made something other than Eggos today. I'm on vacation from cooking, you know.

Guy got ready to head out to Snip-Its to get his hair cut.

Awwww.... so cute! He mixed up his shoes.
The stylist who cut Guy's hair had awesome hair and I asked her about it and she gave me her business card and said she'd do my hair. Yay! I've been looking to get my hair done but wasn't sure where to go. Me and Guy could have the same stylist.

Here's Guy with his haircut and new magazine that came in the mail today.

We spent a good part of the day shopping. I bought some presents and the kids bought some toys. I'm tired but it was a good day aside from like 30 minutes at the mall when Guy was trying to escape me. I don't blame him. I kind of like being alone too.

Vacation: Day 4

The first half of today was really rough. Me and Guy were both really grumpy. Lucy worked on cheering us up. We went to the park this morning hoping to get happy. It backfired. Guy got REALLY mad that I wouldn't let him take Lucy down the slide by himself (the drop at the bottom was too big). He wouldn't move or cooperate after that so we had to leave early.

Here's little climber Lucy. She thinks these pants makes her butt look good.

After we left the park Guy fell asleep right away. When he woke up he was in a MUCH better mood. I felt better after I cleaned up the house. My mom brought lots of stuff with her from Oregon and the house was just a mess. I think I have it all sorted! Here's the sideboard with stuff on it.

One goal I have while Jib is gone is to eat every meal at the table. Today was a failure. We only ate dinner at the table. Lucy had an apple for her appetizer.

After dinner we went for a nice long walk and then the kids played outside while I mowed and tended to the animals. I am getting a lot better with the bees. I started using the smoker and it works great but I smell like a BBQ now. I am excited to get the new feeder still because even if I'm not killing any bees anymore I'm wasting a lot of sugar water from spills.

Sidenote: I'm pretty sure Guy gets his sticker chart. He'll pretend to count the days and when get gets to dada's picture he shrieks "YAAAAAY!!!!!"
