I made four recipes so far (only took pics of two, though) out of this month's Taste of Home's Healthy Cooking magazine. They have all been yummy but I think the Cinnamon Raison Bites recipe is the only one I plan to save.

Cinnamon Raisin Bites:
I really like these and so does Guy. When they came out of the oven he begged for one. After they cooled a bit I gave him one, then another, then another... I didn't understand how he was eating them so fast so after a little detective work I found out he was hiding them around the house. He isn't allowed to eat them without supervision because he chokes on raisins sometimes so I had to put a stop to that.

True Love Chocolate Cake:
Yum yum yum. I don't think I'll be saving this recipe since I have a kazillion chocolate cake recipes to try and this one didn't stand out too much although it was good. The longer this cake has been sitting in the fridge the better it gets so everyday I think I like it more. Guy licks the frosting off and leaves the cake.

Being a Mom

I've spent a large part of the day wearing a paper Burger King crown. I try to take it off and Guy sticks it right back on my head while yelling and shaking a finger at me. Some days I just feel bullied...

Yesterday I was trying to get Guy ready for lunch. When I went to put the high chair tray on the chair I dropped it, tried to catch it, and flung it at Guy's face. He had a black eye yesterday and a terrible lunch experience. I was able to bribe him with blueberries to sit down again. Today his eye looks fine - good thing kids heal fast.

Wednesday - ASH WEDNESDAY - Fasting - Since I'm pregnant and Guy is only one we'll eat PB&J or something.
Thursday - Skillet Pork Chops (Feb/Mar 09 Healthy Cooking), Rice, Chocolate Cake (Feb/Mar 09 Healthy Cooking)
Friday - NO MEAT - Mac & Cheese (Fast Food Fix Cookbook), Toast
Saturday - Leftovers/Freezer Food
Sunday - Navy Bean Soup and Hard Crusty Rolls (King Arthur Flour Baker's Companion)

As the end of February nears our grocery budget is $277 out of the $300. I think I have all groceries for the month, we might go out for lunch on the weekend or buy donuts Sunday morning though. I didn't expect to spend so much this month since we've been trying to empty the freezer and pantry, but we have been eating out more than usual. I blame the excitement of buying a house.

Baking Day

Guy and I made an apple pie today. Well, I made it and he twirled in circles at my feet and begged for candy. During the weekend we saw our Safeway had 3 lb. bags of apples for 99 cents so I have a lot of apples now!

I made pumpkin bread the other day and had leftover pumpkin puree so I made pumpkin muffins today. I used this recipe but made them into full sized muffins. Instead of granola topping, I made a streusel topping.
Guy approves. He was waving at me while I took his picture. I guess he wanted me to leave him alone.

Thrift Shopping

Last week me and Guy went to the kid consignment store since we had some store credit and they were having a big sale. Turns out we had $32 in store credit, now we are down to $20. They treat us well there.

We made some little outfits for Guy's little sister/brother. Hopefully sister since these would look better on a girl.

We got Guy some 18 month sized pants since he doesn't seem to have too many. He wore the overalls once and they were too short. I think he got his monies worth out of them that one day, though.
We bought a gift for someone we know who is having twin boys.

It was a fun shopping day that cost us $0. So that is good for our house-buying budget.

We're Buying A House

We are buying a house! So I've been busy and have been trying not to spend a dime :) Everything has gone well so far and we are in escrow now - just waiting.

It will nice to be a housewife in a house. I think it will give me tons of new stuff to do. The place in a half acre and is ready for gardening and the house has the biggest pantry. Guy loves the huge backyard and he really can't wait to get a kitten to put in it.

February Food Budget

It's only the first and I've already spent a lot!

Carryover from January - $3.04
Scolari's - Four gallons of milk, a dozen eggs, Ritz crackers - $14.25

These things I bought online in January for February and just paid the bill...
Hickory Farms - $17.55 (With sales and online coupons I got these for about 87% off. Shipping is what cost the most! We'll be eating some for the Super Bowl today.)
Swensen's - $28.75 (This is one my favorite places to eat in town. I bought two $25 gift certificates through one of our TV stations. I plan to use one this month and one next month-on my birthday!)

I'm at $63.59 out of my $300 on the 1st of the month! :) I need more practice!

January Food Budget

Since my last post I've been to two drug stores and Round Table Pizza dinner buffet.

At Long's I purchased a family size bottle of conditioner with the remainder of my gift card plus a few pennies from the bottom of my purse. I should get a rebate for $5.50 next month for that.

At CVS I got 3 rolls of paper towels and two bottles of shampoo for 74 cents (plus $7.99 in Extra Care Bucks, got $6 back)

So with those transactions plus eating out on Tuesday I spent $303.04 this month! We ate out 4 times and my pantry and freezer are very full compared to the beginning of the month so I think I did good. I'm going to carry my $3.04 that I went over to next month making this month's spending $300. I do that kind of stuff often on our budget and my husband thinks I'm crooked. Oh well. He's worse. :)
